You say toe-may-to and I say toe-mah-to.....

Hubby said "we're" doing our garden tomatoes today,
so after I went to shop at the flea market at noon (filled my truck again~ fun!),
I came home to get to work.
There weren't as many "fruits" as I'd anticipated;
if I'm going to go to the "trouble" of  taking out the equipment and making a mess,
I like to make it worth the time, but..... went ahead with what we had.
 Clean tomatoes cut in chunks.
My Victorio strainer I inherited from my mother-in-law.
Would you believe this was all the waste there was left
from all those juicy red globes?
 Juice runs down the front,
while the skins and seeds shoot out the side.
Into a cheesecloth bag I put chopped onion and celery, whole cloves,
whole pepper corns, bay leaves, dried thyme & Italian herbs...
can't remember what else...
I let this simmer all afternoon and evening
until it was reduced by nearly 1/2.
After it cooled, I ladled it into 4, quart freezer containers.
This will taste so good this winter in spaghetti, pasta, chili, soups, etc.
And for tomorrow....freezing our sweet corn!
